Snowball Coconut Energy Bites

Recipe

No bake, Vegan, gluten free and taste great!

  • 1 cup Medjool dates, pitted
  • ½ cup desiccated coconut
  • ½ cup cashew nuts, unsalted
  • 1 tbsp coconut oil
  • 1 tsp vanilla paste
  • 1 tsp cinnamon powder
  • 1 tsp PureChimp matcha

Directions

1. Chop the pitted dates and add to a food processor, blend.

2. Melt the coconut oil in the microwave for 20 seconds.

3. Add the cashews, oil, vanilla paste, cinnamon, matcha and half the desiccated coconut to the processor and blend again.

4. Once combined roll into small balls and dust with the remaining coconut.

5. Refrigerate for 15 mins.
