Need a speedy breakfast? Here are some quick, healthy and delicious options

eating avocado on toastIt is no secret that breakfast is the most important meal of the day, but many of us seem to forgo it when things are a little busy.

Here at PureChimp we say that this isn’t good enough; so we have put together some super speedy, super tasty breakfast ideas that you can eat in a rush and go about your day!

Avocado and Egg Toast

Avocado has become hugely popular over the past few years, not at least because it is a food that is pretty darn good for you. Lightly toast 2 slices of whole-grain bread and then top with plenty of smashed avocado. Pop on two eggs (just how you like them) and you have a protein packed, well rounded breakfast. No time to eat it at home? Why not pop it in a Tupperware to take with you and enjoy when you get to work.

Chocolate Quinoa Breakfast Bowl

Are you a sucker for a sugary chocolate cereal? If you are then we have a healthy way to enjoy a bit of chocolate for breakfast. All you need is:

  • 1 cup of uncooked white quinoa
  • 1 cup of unsweetened almond milk
  • 1 cup of coconut milk
  • 2 Tbsps of cocoa powder
  • 2-3 tsp of maple syrup
  • 3-4 squares of dark chocolate

To make this tasty breakfast you need to toast your rinsed and drained quinoa in a saucepan for 3 minutes. After that you will need to add the two types of milk and bring to the boil over a high heat. Once boiling, reduce the heat and simmer for 20-25 minutes stirring every now and then.  

Once all the liquid is absorbed and the quinoa is tender you need to remove from the heat, add the cocoa powder, maple syrup and stir.

Serve in a bowl topped with the chocolate and mixed berries.

Egg Breakfast Muffin

There seems to have been a huge surge in the world of carb-free muffins. These eggy delights are healthy, low fat and packed full of protein; just what you want to get your day started. Best of all, they are easy to cook and you can make them the night before ready to take with you in the morning.

The ingredients for this breakfast:

  • 12 hole muffin tin
  • 1 bell pepper
  • 3 spring onions
  • 4 cherry tomatoes
  • 6 eggs
  • A pinch of salt

These are the basic things you need, after that, the things you add are entirely down to you. Some of our recommendations are:

  • Cheese
  • Spinach
  • Hot sauce or curry powder
  • Mushrooms
  • Red onions
  • Ham
  • Lean Bacon

To make these muffins you just need to pre-heat the oven to 200°C. Mix the pepper, onion and tomatoes in a big mixing bowl before adding the eggs (and any other ingredients that you want to have in there).

Give it all a god mix before greasing the muffin tin up with a spot of oil. Add the egg mixture to the muffin tin and if you fancy it, layer some cheese on top. It will need to be cooked for around 15-18 minutes in the oven and should be firm to the touch.
