Berry Matcha Pancakes

Recipe (10-12 pancakes)

  • 2 cups all-purpose flour
  • 1/2 teaspoon Stevia
  • 2 teaspoons matcha powder
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 eggs
  • 1 ½ cups of preferred milk
  • Drop of Vanilla extract
  • 2 tablespoons melted butter
  • Pomegranate
  • Mixed Berries
  • Honey

Directions

1. In a large mixing bowl, mix together dry ingredients.

2. In a separate bowl, whisk eggs, vanilla and add milk.

3. Stir egg mixture into dry ingredients and stir just until mixture is wet.

4. Heat a large pan over medium heat and add oil or a knob of butter. Once simmering, add some batter to your pan. After bottom browns and bubbles begin to appear (~1-2 minutes), flip pancake and cook an additional 1-2 minutes.

5. Mix together the honey and berries and pour over the top.

6. Sprinkle with pomegranate.
